Bande aux Fruits
Bande aux fruits is a strip of puff pastry decorated in the middle with pastry cream and slices of mix fruits such as strawberries, kiwis, peaches, plums, figs, grapes, and anything else you like really.
INGREDIENTS
200g puff pastry
egg wash
400g mix fruit, such as strawberries, kiwis, peaches and plums
250g pastry cream
2 tbsp apricot jam, for glazing
METHOD

METHOD
- Roll out the pastry 2mm thick in a strip 12cm wide, and place on greaseproof sheet on a baking tray.
- Prick the strip of puff pastry and moisten the two long edges with egg wash.
- Lay two 1.5cm wide strips along each edge.
- Rest it in the fridge for about 1 hour.
- Glaze the two long edge strips with egg wash.
- Bake at 220'c for 20 minutes.
- Leave it to cool down.
- Decorate with pastry cream and slices of mixed fruit.
- Glaze everything with apricot jam and serve.
