Bread and Butter Pudding

Bread and butter pudding is made by layering slices of buttered bread scattered with raising in a oven dish into which an egg and milk (or cream) mixture, commonly seasoned with nutmeg, is poured.


INGREDIENTS

50g sultanas
2 slices of white bread, spread with butter
3 eggs
50g caster sugar
1/2 vanilla pod or 2-3 drops of vanilla essence
1/2 litre of milk


METHOD

  1. Wash the sultanas and place in a pie dish or individual dishes.
  2. Remove the crusts from the bread and cut each slice into four triangles; neatly arrange overlapping in the pie dish.
  3. Prepare the egg custard: whisk the eggs, sugar and vanilla together. Warm the milk and pour it onto the eggs whisking continuously.
  4. Pass the custard onto the bread and dust lightly with sugar.
  5. Leave it to rest for 20 minutes to let the bread soak properly.
  6. Stand in a roasting tray full of water and cook slowly in the oven at 160'c for 45 minutes to 1 hour.
