Bread and Butter Pudding
Bread and butter pudding is made by layering slices of buttered bread scattered with raising in a oven dish into which an egg and milk (or cream) mixture, commonly seasoned with nutmeg, is poured.
INGREDIENTS
50g sultanas
2 slices of white bread, spread with butter
3 eggs
50g caster sugar
1/2 vanilla pod or 2-3 drops of vanilla essence
1/2 litre of milk

METHOD
- Wash the sultanas and place in a pie dish or individual dishes.
- Remove the crusts from the bread and cut each slice into four triangles; neatly arrange overlapping in the pie dish.
- Prepare the egg custard: whisk the eggs, sugar and vanilla together. Warm the milk and pour it onto the eggs whisking continuously.
- Pass the custard onto the bread and dust lightly with sugar.
- Leave it to rest for 20 minutes to let the bread soak properly.
- Stand in a roasting tray full of water and cook slowly in the oven at 160'c for 45 minutes to 1 hour.
