Hot Cross Buns
A hot cross bun is a spiced sweet bun made with currant or raisins and marked with a cross on the top, traditionally eaten on Good Friday.
INGREDIENTS
basic bun dough (see my other recipe)
50g dried currant or sultanas
mixed spices
egg wash

100g flour
100g water

METHOD
- Add to the basic bun dough 50g of currant or sultanas, and some mixed spices.
- Mould into 8 round buns.
- Brush liberally with egg wash.
- Make a cross on top of each bun using a piping bag filled with a mixture of flour and water.
- Place on a lightly greased baking sheet, cover with a cloth and allow to prove.
- Bake in a hot oven at 220'c for 15-20 minutes.
