Bun dough

With this basic recipe you can produce lots of delicious goods such as bun dough, Devonshire splits, Bath buns, iced buns, etc.


INGREDIENTS

600g strong flour
6g bread improver
15ml milk powder
75g sugar
7g salt
60g unsalted butter
30g egg
37g fresh yeast
300g water, lukewarm


METHOD

  1. Sieve the flour into a bowl and add bread improver and milk powder. 
  2. Rub the butter into the flour mix resembles breadcrumbs. Mix in the salt and sugar.
  3. Disperse the yeast in some of the lukewarm water (but not all the water).
  4. Make a well in the flour mix and add the yeast and egg.
  5. Add most, but not all, the water and knead until the dough loses its stickiness. Add the rest of the water only if the dough is too dry.
  6. Leave to prove until doubled in size.
  7. Knock back and divide equally into 16 pieces. 
  8. Mould into required shapes and prove again.
