Doughnuts
Doughnuts are usually deep-fried from a flour dough and shaped in rings or flattened spheres, that sometimes contain fillings such as fruit preserves, cream, custard or other sweet fillings.
INGREDIENTS
Basic bun dough (see my other recipe)
caster sugar, for coating
cinnamon, for coating
strawberry jam, for filling

METHOD
- Take the basic bun dough and divide into 8 pieces.
- Mould into balls.
- Cover and allow to prove on a well-floured tray.
- Deep-fry in moderately hot oil at 175'c for 12-15 minutes.
- Lift out of the oil, drain and roll in a tray containing caster sugar mixed with a little cinnamon.
- Leave to cool down a bit and then, using a piping bag, fill them in with strawberry jam.
