Fruit Fritters

These are a mix of fruits dip in batter and fried, absolute easy to make. And alternative way to eat fruit ;)


INGREDIENTS

450g plain flour
pinch of salt
6 egg yolks
450ml white wine
90ml frying oil


METHOD

  1. Sieve the flour and salt into a bowl and make a well in the centre.
  2. Add the beaten egg yolks, wine and oil, gradually incorporate the flour from the sides, and whisk to smooth the batter.
  3. Leave the mixture to rest for at least 10 minutes (this helps the gluten to relax).
  4. Pour some frying oil into a deep pot to a depth of one to two inches. Heat the oil at 190'c.
  5. Deep the fruit into the butter.
  6. Carefully transfer the battered fruit to the oil.
  7. Fry until golden brown, turning a few times.
