Fruit Fritters
These are a mix of fruits dip in batter and fried, absolute easy to make. And alternative way to eat fruit ;)
INGREDIENTS
450g plain flour
pinch of salt
6 egg yolks
450ml white wine
90ml frying oil

METHOD
- Sieve the flour and salt into a bowl and make a well in the centre.
- Add the beaten egg yolks, wine and oil, gradually incorporate the flour from the sides, and whisk to smooth the batter.
- Leave the mixture to rest for at least 10 minutes (this helps the gluten to relax).
- Pour some frying oil into a deep pot to a depth of one to two inches. Heat the oil at 190'c.
- Deep the fruit into the butter.
- Carefully transfer the battered fruit to the oil.
- Fry until golden brown, turning a few times.
