Sable Biscuits
Sable' is a crumbly biscuit of varying size, usually round and often with fluted edge. Sables are made from flour, butter, egg yolks and sugar mixed rapidly until they reach a sandy texture.
The mixture is kneaded quickly, then either rolled out thinly and cut our with a pastry cutter.
Sable' can be flavoured with lemon, flaked almonds or raisins, and iced with chocolate or topped with jam.
INGREDIENTS
250g plain flour
200g butter, cut into small cubes
100g icing sugar
pinch of salt
2 egg yolks
4 tbsp raspberry jam
METHOD

METHOD
- Place the flour, butter, icing sugar and salt into a bowl. Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.
- Add the egg yolks and mix until a dough forms. Turn out onto a lightly floured work surface and roll out to a thickness of about 0.5cm.
- Cut to required size and shapes.
- Bake the sables at 190'c for 10-12 minutes, or until light golden-brown and crisp.
- Remove and transfer to a wire rack to cool.
