Cupcakes

Cupcake, or fairy cake, is a small cake designed to serve one person, frequently baked in a small thin paper or aluminium cup.

Frosting and other cake decorations, such as sprinkles, are common on them.


INGREDIENTS

125g butter
125g caster sugar
125g plain flour
6g baking powder
2 eggs, beaten
drop of milk
drop of vanilla extract


METHOD

1. Cream the butter and sugar in a bowl until soft and fluffy (it should become pale in colour, almost white).
2. Add in the vanilla extract and mix well.
3. Very slowly add the well-beaten eggs, mixing continuously and beating really well between each addition.
4. Sieve in the flour and baking powder and fold gently with a metal spoon.
5. Add in the milk if the mixture is too dry.
6. Divide the mixture in equal quantities into the paper cases and bake at 180'c for 20 minutes.
