Cupcakes
Cupcake, or fairy cake, is a small cake designed to serve one person, frequently baked in a small thin paper or aluminium cup.
Frosting and other cake decorations, such as sprinkles, are common on them.
INGREDIENTS
125g butter
125g caster sugar
125g plain flour
6g baking powder
2 eggs, beaten
drop of milk
drop of vanilla extract

METHOD
- Cream the butter and sugar in a bowl until soft and fluffy (it should become pale in colour, almost white).
- Add in the vanilla extract and mix well.
- Very slowly add the well-beaten eggs, mixing continuously and beating really well between each addition.
- Sieve in the flour and baking powder and fold gently with a metal spoon.
- Add in the milk if the mixture is too dry.
- Divide the mixture in equal quantities into the paper cases and bake at 180'c for 20 minutes.
